Szczepan is an experienced Head Chef with over 13 years’ experience in 4* Hotels, Restaurants and Gastro Bars. He joined the team from the Harbourmaster Bar & Restaurant where he was Chef Consultant. No stranger to Drogheda he was Head Chef in the Black Bull Inn, a very busy gastro pub and restaurant here in the town. Previous to that he spent almost 3 years with FX Buckley restaurants and held senior roles in the 4-star Castleknock Hotel & Country Club and Louis Fitzgerald Hotels. He is an energetic culinary professional with a blend of creativity, passion for food and great cooking skills.
Navin Sookun
Executive Head Chef
Born in Mauritius, Nav has been living and working in Drogheda for the last x years and has been with the d hotel since 2018. He was behind the relaunch of The Hops menu, combining pub favourites with other culinary additions to create a truly original bar food menu.
Trained as a chef in Mauritius he’s been working as a chef for 23 years and brings considerable experience and flair to Goodwins and has been instrumental in creating a unique menu that will satisfy any palette or occasion. His favourite dish from the menu? Has to be the Rib Eye
Louise Byrne
Restaurant Manager
A new restaurant, a new look and a new menu but it’s not all changed as regular visitors, to what was Il Ponte, will be delighted to see a familiar face still providing the best customer service around.
A born and bred native of Drogheda, Louise has been ensuring the highest level of customer service in the restaurant and The Hops since 2012. With 20 years of experience working in the hospitality industry, her love of meeting new people, catching up with others for a chat and pride in her job means you’ll be well looked after.
