I’m Jonathan Fearon 33 from Newry In Co. Down, Married to my beautiful wife Laura and we have an amazing Daughter whose 2 called Saoirse and our Collie retriever Rocco and were living in the royal county of Meath. ( Going to be a hard weekend for me if Downplay Meath in the final of The Tailteann Cup)
My involvement in food started from an Early age learning to cook from my mother who’s a chef and passed down the skills I carry today. She taught all 3 of us, my brother sister and I how to cook classic dishes that we still eat today, sometimes we even done our homework in the back of the kitchen where she worked until our dad would collect us and take us home.
I trained in Newry Southern Regional college (the centre of excellence) under the tutelage of Barry Smyth, Lynette mc math and Adrian Fitzpatrick who taught me a lot, and even took me into the Parade de chef in the Salon Culinaire where our team won gold and best in class.
My professional Career started under the Guidance of my uncle and head Chef Michael Mc Camely who trained at Westminster college in London.
Coming to the D hotel has been an amazing 5/6 weeks, the staff and team around have been so welcoming and supported me in rebuilding the Kitchen team and putting in the New Al a Carte menu in Goodwins. We are focusing on fresh and sustainable fish, seasonal vegetable and Dry aged beef served in a relaxing restaurant overlooking the Boyne River. I’d like for our winter menu to include more local produce from the Boyne valley and Surrounding areas so if you’d like to work with me see me.
My Motto is: “don’t over complicate the food keep it simple and serve it right, let the ingredients we have in Ireland Shine Through”.
